Alex Villeneuve is a second year student in our Brewmaster and Brewery Operations Management program, and is Founder and Director of Ceres Solutions Ltd. Ceres is an innovative startup company that up-cycles brewery waste through a unique biological process. This procedure converts low-grade cellulose into a variety of high quality products for restaurants and the agri-business sector. Ceres is in the process of bringing high protein edible mushrooms grown from brewery spent grains to market, and is also working with those spent grains to create high protein livestock feed.
